Make this: Quinoa arepas

I don't even know what arepas are but after seeing these quinoa arepas from the post social I'm now wanting them like crazy. Though the recipe isn't quite vegan, I'm sure I could whip up something similar in taste and texture. Doesn't it just look like the perfect summer morsel?
