Make this, Pinata cookies!

Oh my goodness how I love these cookies from super talented baker Sandra Denneler of Project Deeneler. Teaming up with She knows, Sandra created these incredible creations for Cinco de Mayo and it may be the perfect dessert for any party this weekend. I have got to find a way to veganize this recipe, its just too fun not to try and recreate! These cookies have blown up over on pinterest and its pretty easy to see why, I've definitely got them bookmarked ... even Pee Wee is a fan.

Blog love: Sprinkle Bakes

I totally have a foodie blog crush for Sprinkle Bakes, a collection of the most amazing and almost all simple to make desserts you will see. Filled with color and a little whimsy, brilliant baker Heather Baird has not only given us drool worthy photography, she even includes recipes- and even though they seem out of this world difficult, Heather is known to throw in a few boxed cake mixes to make it that much easier. Although I strictly bake vegan in our kitchen, I am always tempted to try out new desserts with my own vegan twist... and you can bet I've added Heather's recipes to my 'to bake' folder.  So head on over to Sprinkle Bakes for such amazing treats you will want to lick your monitor.

Make this, Cherry cornbread muffins

Now that cherries are in season I can't seem to get enough of them and it helps that all the local grocery stores have super low prices.  I had a craving for something sweet and knowing my husbands love of cornbread, decided to give mixing the two a try.  Total success.  Unfortunately I didn't realize how large of grain the cornmeal was, so mine were a bit course, next time its going into the food processor first.  And of course, I had to make a few with a little chocolate.  I just mixed in a few chocolate chips into the center of the batter before baking, if you're like me and can't wait till they are cool, the chocolate inside is all nice and gooey!
Cherry Cornbread Muffins
1 Cup flour
1 Cup cornmeal
1/2 Cup sugar
2 tsp baking powder
dash of salt
1 Cup milk substitute {I used rice milk}
1/4 Cup oil {I used canola}
1 egg replacer
Cherries, pitted and sliced in quarters

*Combine the flour, cornmeal, sugar, baking powder and salt in a large bowl.  Mix well.
*In a separate bowl, combine the milk, oil and egg replacer. {Pre mix egg replacer before adding to wet mixture}
*Combine wet and dry ingredients and mix well.
*Fold in cherries.
*Using a cookie scoop try to get just the mixture into the edges keeping the cherries from touching the edges, it gets super sticky.  Fill about 3/4.
*Bake at 350 for 15 minutes.

Spent the afternoon pulling together a few new recipes for the husbands birthday this weekend.  He asked for baked goods, so that's what he gets!  Don't you just love the purple blooms?  Our plant is producing so many flowers daily, we can't keep up.  Next up, cookies.

Edible art

I spotted these edible creations over at cool hunting and just had to share with you.  Over the last few years I have been getting more and more into baking, and these would be a perfect addition to my arsenal of baking goodies.  Using edible icing in sheets, Ticings has created a fun way to add a little something to ordinary cupcakes, cookies and cakes.  Not only are they super easy to use, you just peel and stick, you can also get custom designs for those special occasions.  Plus, they can be used on homemade or store bought cupcakes, so if you're running low on time, no one will ever know!  And just in time, Ticings has come out with a fun collection for Halloween.

For the foodies in all of us

Why hello blogging buddies, its just about lunchtime here and I just might make you drool over this next blog I found.  Now, I'm not the biggest foodie, as a vegetarian it takes a lot to make my mouth water, as well as recipes that I can actually follow and adjust to my needs, but just about everything over at Not So Humble Pie has got me craving scrumptious little morsels. The photography drew me in, and the ideas and inspiration get better and better with each page.  I guess its a good thing I don't cook egg or else I would probably be another 10 pounds heavier thanks to Ms. Humble!  Do stop on by for absolutely wonderful tips for the kitchen as well as some super creative science inspired cookies.
